INTERNATIONAL JAMÓN IBÉRICO CUTTING CONTEST FOR STUDENTS OF HOSPITALITY SCHOOLS

What is the key to cutting ham well? The knife, the holder, the technique, a mixture of theoretical and practical knowledge. And of course: a good Jamón Ibérico. The IES Hotel Escuela from the Community of Madrid hosted the 4th International Jamón Ibérico Cutting Contest, promoted by the Interprofessional Association of Iberian Pork (ASICI) with the aim of giving visibility to the cutting of Jamón Ibérico, and highlighting the figure of the cutter as an exceptional figure in the restaurant industry.

15 students of different nationalities from renowned hospitality schools from all over Europe participated in the contest.

The panel, made up of several expert cutters and chefs, followed–and tasted–each of their proposals carefully.

The Cutting Contest is a training event framed within the promotional programme “Jamones Ibéricos from Spain, Ambassadors for Europe in the World”, where the Ibérico sector, with the support of the EU, aims to spread the word about the versatility and quality of an exemplary product from the Mediterranean Diet and a cultural emblem of our country.
